Wild Rice Casserole

I got to stay home all day today, well not really I drove Kristy and her friend to school.
I didn't get a good sleep last night. I couldn't fall asleep. This never happens to me.
I couldn't stop thinking about my dad. Remembering talking to him and funny things he would do. My mind just didn't want to shut down for the night.
Then this morning I woke up real early and couldn't fall back asleep. I think I got about 4 hours of sleep. I kept thinking about my nieces. I had to finally tell myself it is out of my control and I am doing all I am capable of doing.
I want to thank all you lovely ladies for your sweet comments about this.

So today I made Cil's Wild Rice Casserole. Cil was my MIL.
This takes a bit to prepare. Well for me anyway. If you follow my blog regularly then you know how much I love to cook (insert sarcasm).
So 1st you have to prepare your wild rice. In order to do this you have to soak it overnight.
Then rinse in well. Then boil it. Then rinse it well. Then add salt and boil for 20 mins.
See the difference, the rice has opened up. Then you cook the sausage and mix all the rest of the ingredients and then bake it in the oven. Boy I sure love my family :)
So besides making this today, I organized my scrap/craft room. Well I guess you can say I re-organized it. I organized it last year, I am tweaking it this year. I am in need of some more containers, so I will go out tomorrow and see what I can find. I am actually enjoying this.
I got Ashley to mail my parcels today, thank you Ashley. Marlene, its on its way :)

1. Cleaning up my scrap/craft room.
2. Not taking a nap
3. Making a meal my family loved, that was from my loving MIL

4. Finally got my parcels in the mail.

    I also cleaned/rearranged my scrap room. It looks so nice, I don't want to make anything in fear I will mess it up again...lol

  5. Sorry you didn't sleep well, but glad you didn't take a nap. Sleep will surely come tonight! Your rice looks delicious! Congrats on getting the craft room cleaned up! Shopping for containers is my favorite part...

  7. ok the casserole looks good - but my kids would not touch it .. due to the rice factor *insert eye roll*

    on the other hand - I think you are me - always reorganising my craft space LOL... in fact I was at IKEA on Monday .. filling in some time while my oldest was at college - and bought some more storage stuff - that place rocks!!
